Savory Red Lentil Oatmeal - NO OIL, NO DAIRY!

Oatmeal continues to be one of the most fundamental building blocks for the plant-based diet – at least in my experience. The opportunity to create diverse meals is significantly high. It may take a few minutes for you to wrap your head around this savory oatmeal recipe, but I think you will find it to be something unique and enjoyable.

In many ways, it sort of meets the need of a good comfort food – it’s relatively easy to prepare, is really suitable at any time of the day (breakfast, lunch, dinner…or maybe a mid-day snack!), and brings some zest that is often lacking from a dish based around oatmeal.

Blueberry Baked Oatmeal



1 Combine all the dry ingredients (oats, brown sugar, cinnamon, nutmeg, salt, flaxseed, and baking powder) in a large bowl.

2 In a medium sized bowl combine all liquids (almond or soy milk, applesauce, and vanilla). 

3 Add liquid ingredients to dry ingredients and stir to combine. Gently stir in blueberries.

4 Place in a 9x13 ungreased pan. Bake at 350° degrees for 35 minutes.

We like to eat this for breakfast in a large bowl drizzled with almond milk and maple syrup!

Pumpkin Overnight Oatmeal


• 2 cups of rolled oats
• 2 cups of water
• 1 cup of pumpkin
• 2 tsp cinnamon
• ½ tsp nutmeg
• ½ tsp ginger
• 2 tbsp maple syrup or brown sugar (add more if you like!)

This is really simple! Just mix the ingredients together the night before you plan to eat, then let the mixture sit in your fridge overnight. Come morning, you will find the result is a yummy and creamy pumpkin treat perfect for breakfast. Full of nutrition and healthy fuel to get your body jump started for the day! This makes enough for my wife and I to have an extra generous bowl each in the morning!

Pumpkin Pancakes



1 Stir together the dry ingredients in a medium sized bowl.

2 Stir together the wet ingredients in a separate large bowl.

3 Fold the dry ingredients into the wet ingredients and mix thoroughly.

4 I cook my pancakes on my non-stick skillet so no oil/spray/butter is needed!

Blueberry Oatmeal Pancakes




1 Whisk together milk and apple cider vinegar and let sit for 10 minutes.

2 Combine wet ingredients together in medium sized bowl. Combine dry ingredients in a large sized bowl. Pour wet into dry and stir well to combine.

3 On a non-stick skillet cook the pancakes for 4-5 minutes on each side.
