Simple Linguini, Tomato Basil Sauce, and Sautéed Onions

Are you looking to cook a simple, plant-based dinner tonight? The simple linguini, tomato basil sauce, and sauteed onions recipe should do the trick. 

While you can certainly create your own pastas and sauces, it is often easier to just use store bought products. In an effort to make a simple, less time consuming dinner recipe, I opted to use store brand linguini and Francesco Rinaldi's Hearty Tomato & Basil Sauce. This is a great sauce because it is vegan friendly and features minimal ingredients - which is primarily made up of the expected vegetables and natural spices. With this great base, I was able to prepare some sautéed onions while the pasta was cooking!

The Easiest Chunky Guacamole Recipe in the World

While guacamole is generally thought of as smooth and creamy, I thought I would put together this really easy recipe I sometimes make when I don’t feel like being in the kitchen for a long time. It is easy to make a chunky guacamole, and the great part is that chunks of avocado and tomato seem to break apart in the mouth quite easily. Pair this guacamole with another recipe – like our authentic vegan eggplant and guac tacos – and you are surely going to be left satisfied!

Tomato and Basil Pasta

Ingredients:

Directions:

1 Cook pasta according to directions.

2 Place vegetable broth, tomatoes, and garlic in large saute pan and saute for 10 minutes.

3 When pasta is almost done cooking take out 3/4 cup of the pasta water and add to tomato mixture. Also add in basil, sea salt, pepper, and nutritional yeast.

4 Drain pasta and add pasta to tomato mixture. Stir well to combine. Serve immediately.
