Simple Linguini, Tomato Basil Sauce, and Sautéed Onions

Are you looking to cook a simple, plant-based dinner tonight? The simple linguini, tomato basil sauce, and sauteed onions recipe should do the trick. 

While you can certainly create your own pastas and sauces, it is often easier to just use store bought products. In an effort to make a simple, less time consuming dinner recipe, I opted to use store brand linguini and Francesco Rinaldi's Hearty Tomato & Basil Sauce. This is a great sauce because it is vegan friendly and features minimal ingredients - which is primarily made up of the expected vegetables and natural spices. With this great base, I was able to prepare some sautéed onions while the pasta was cooking!

Our avocado and cilantro rice recipe is a unique take on a rice dish that really allows us to explore some different flavors and textures. Often a struggle for some who are transitioning to a plant-based diet is being able to keep the food they are eating feeling fresh. If you are well adjusted to eating plain old rice, but haven't really explore many plant-based alternatives, I think you may just find what you are looking for here!

Frozen Fruit Sorbet

Ingredients:

  • 1 (16 oz) bag frozen organic tropical fruit blend (I purchased mine from Trader Joe's)
  • 1 ripe banana
  • Water

Directions:

1 Fill bottom of blender with 1 ½ inch of water. Add in bag of frozen fruit and chopped up banana.

2 Put on lid and start blending on low for about 30 seconds. Increase speed to high and blend until smooth and creamy.

You can also make a strawberry or blueberry sorbet. Just buy a bag of frozen strawberries or blueberries and use that in place of the bag of tropical fruit blend.

Enjoy! This is especially good on a hot day!

Homemade Cranberry Sauce

Ingredients:

Directions:

1 Combine orange juice, sugar, maple syrup, cinnamon, nutmeg, salt, orange zest and cranberries in a saucepan.

2 Over medium heat bring to a light simmer and let cook for 15 minutes.

3 Let cool for 15 minutes.

Pumpkin Overnight Oatmeal

Ingredients:

• 2 cups of rolled oats
• 2 cups of water
• 1 cup of pumpkin
• 2 tsp cinnamon
• ½ tsp nutmeg
• ½ tsp ginger
• 2 tbsp maple syrup or brown sugar (add more if you like!)

This is really simple! Just mix the ingredients together the night before you plan to eat, then let the mixture sit in your fridge overnight. Come morning, you will find the result is a yummy and creamy pumpkin treat perfect for breakfast. Full of nutrition and healthy fuel to get your body jump started for the day! This makes enough for my wife and I to have an extra generous bowl each in the morning!
