Pumpkin Muffins



1 Mix together all dry ingredients in large bowl.

2 Mix together all wet ingredients in medium sized bowl.

3 Pour wet ingredients into dry ingredients and stir well to combine.

4 Place in muffins tins and bake for 20 minutes in a 350° degree oven.

You can add raisins, walnuts, or dairy free chocolate chips if you want! This recipe makes 12 muffins!

Pumpkin Overnight Oatmeal


• 2 cups of rolled oats
• 2 cups of water
• 1 cup of pumpkin
• 2 tsp cinnamon
• ½ tsp nutmeg
• ½ tsp ginger
• 2 tbsp maple syrup or brown sugar (add more if you like!)

This is really simple! Just mix the ingredients together the night before you plan to eat, then let the mixture sit in your fridge overnight. Come morning, you will find the result is a yummy and creamy pumpkin treat perfect for breakfast. Full of nutrition and healthy fuel to get your body jump started for the day! This makes enough for my wife and I to have an extra generous bowl each in the morning!

Pumpkin Pancakes



1 Stir together the dry ingredients in a medium sized bowl.

2 Stir together the wet ingredients in a separate large bowl.

3 Fold the dry ingredients into the wet ingredients and mix thoroughly.

4 I cook my pancakes on my non-stick skillet so no oil/spray/butter is needed!
