One of my favorite muffin recipes is this easy to prepare and very healthy snack. What I really love outside of the moist and sweet taste is the ability to prepare many muffins early in the week, store in the fridge, and eat as needed generally as little snacks. They are easy to take along to work at my contracting jobs, and I imagine you could find a similar benefit.

Eggplant Parmesan is a great lunch or dinner meal that is hearty, full of flavor, and nutritionally sound. Did you know, eggplant is in a plant-family that is related to potatoes, one of my favorite foods and basis of the Starch Solution diet advocated by Dr. John McDougal? In this way, you may notice a similarity in taste and texture. One other thing about eggplant that can be desirable in a vegan diet is that it does a decent job of replicating the taste and texture of chicken - which is why "eggplant parmesan" is also an enjoyed alternative to "chicken parmesan," even in some large restaurant chains. Tortillas are an excellent way to add variety to the food you are eating. Though a part of the Standard American Diet, meat tacos were always enjoyed by my stomach because of the ability to make them in so many different ways. Adding chicken, steak, beef, fish and shrimp, among many fruit, veggie, and condiment variations allowed me to keep my lunch and dinners fresh. Of course, a whole foods, plant based lifestyle does not allow me to use all the greasy oils, dairy products, and meats. BUT, that doesn't mean we can't have a healthy, vegan alternative that provides us the same opportunity for variety!
