Savory Red Lentil Oatmeal - NO OIL, NO DAIRY!

Oatmeal continues to be one of the most fundamental building blocks for the plant-based diet – at least in my experience. The opportunity to create diverse meals is significantly high. It may take a few minutes for you to wrap your head around this savory oatmeal recipe, but I think you will find it to be something unique and enjoyable.

In many ways, it sort of meets the need of a good comfort food – it’s relatively easy to prepare, is really suitable at any time of the day (breakfast, lunch, dinner…or maybe a mid-day snack!), and brings some zest that is often lacking from a dish based around oatmeal.

Baked Blueberry Oatmeal Muffins with Chocolate Chips - NO DAIRY, NO OIL

One of my favorite muffin recipes is this easy to prepare and very healthy snack. What I really love outside of the moist and sweet taste is the ability to prepare many muffins early in the week, store in the fridge, and eat as needed generally as little snacks. They are easy to take along to work at my contracting jobs, and I imagine you could find a similar benefit. 

Banana Oatmeal Walnut Muffins

Ingredients:

Directions:

1 Stir all dry ingredients including flour, oatmeal, baking powder, flaxseed, sea salt, and brown sugar in large bowl.

2 Stir liquid ingredients including almond milk, applesauce, vanilla, and maple syrup in medium sized bowl. Mash up the 2 bananas and add to liquids.

3 Pour liquids into bowl of dry ingredients and stir well to combine. Add in the chopped walnuts and stir.

4 In an oven preheated to 350° degrees pour muffin batter into an ungreased 12 muffin pan. Bake for 22 minutes.

Blueberry Baked Oatmeal

Ingredients:                                                      

Directions:

1 Combine all the dry ingredients (oats, brown sugar, cinnamon, nutmeg, salt, flaxseed, and baking powder) in a large bowl.

2 In a medium sized bowl combine all liquids (almond or soy milk, applesauce, and vanilla). 

3 Add liquid ingredients to dry ingredients and stir to combine. Gently stir in blueberries.

4 Place in a 9x13 ungreased pan. Bake at 350° degrees for 35 minutes.

We like to eat this for breakfast in a large bowl drizzled with almond milk and maple syrup!
