I really love simple recipes that have just a few ingredients that come together in a small time frame. Of course, when the outcome is something tasty, it makes the simplicity easier to be appreciated and enjoyed. This is the case for some dairy-free (vegan friendly!) chocolate banana oatmeal cookies. These are great and can be made without oil by using an oil substitute - the bananas actually serve this purpose.

One of the toughest part for many who switch to a whole foods, plant-based diet is giving up sweets. Ice cream is an addicting substance. Something about the sugar content paired with the many flavor options, constantly evolving due to mom-and-pop ice cream parlors that continue to operate and experiment, makes it so appealing. Not to mention the low cost. Fortunately, vegans have ice cream alternatives that allows us to get our fill with a similar taste and texture, and it isn't difficult at all to make. You can make your own Neapolitan, Vegan Ice Cream in just a handful of minutes.

Banana Oatmeal Walnut Muffins

Ingredients:

Directions:

1 Stir all dry ingredients including flour, oatmeal, baking powder, flaxseed, sea salt, and brown sugar in large bowl.

2 Stir liquid ingredients including almond milk, applesauce, vanilla, and maple syrup in medium sized bowl. Mash up the 2 bananas and add to liquids.

3 Pour liquids into bowl of dry ingredients and stir well to combine. Add in the chopped walnuts and stir.

4 In an oven preheated to 350° degrees pour muffin batter into an ungreased 12 muffin pan. Bake for 22 minutes.

Blueberry Baked Oatmeal

Ingredients:                                                      

Directions:

1 Combine all the dry ingredients (oats, brown sugar, cinnamon, nutmeg, salt, flaxseed, and baking powder) in a large bowl.

2 In a medium sized bowl combine all liquids (almond or soy milk, applesauce, and vanilla). 

3 Add liquid ingredients to dry ingredients and stir to combine. Gently stir in blueberries.

4 Place in a 9x13 ungreased pan. Bake at 350° degrees for 35 minutes.

We like to eat this for breakfast in a large bowl drizzled with almond milk and maple syrup!

Blueberry Oatmeal Pancakes

Ingredients:

Directions:

1 Whisk together milk and apple cider vinegar and let sit for 10 minutes.

2 Combine wet ingredients together in medium sized bowl. Combine dry ingredients in a large sized bowl. Pour wet into dry and stir well to combine.

3 On a non-stick skillet cook the pancakes for 4-5 minutes on each side.
