Simple Broccoli, Cauliflower and Potato Dinner Plate


If you’re like me, sometimes vegan recipes can get a little out of hand with the number of ingredients and time required to prepare. The beauty of living a plant-based lifestyle and creating meals out of whole, plant-based foods is that sometimes simplicity is all you need. This meal is created with virtually no cost as I harvest all of the vegetables straight from my garden.

All you need to do is prepare the broccoli, cauliflower and potato to your liking. The preparation will, of course, impact the taste and texture of the food so it is here that you can experiment and explore your options. I frequently enjoy baked potatoes (without butter or oils), and like making many other veggies in my Instant Pot pressure cooker (as is the case with the broccoli and cauliflower in this dish).

If this is “too easy” for you, consider making this into a homemade veggie tray. You could provide food for a large group of people just by increasing the amount of food prepared. One third of the tray could be comprised of baked potatoes (or you could make them into potato fries), another third to broccoli, and the last third to cauliflower. You may consider keeping the latter two veggie options raw if you would intend for these to be used as finger foods with dip.

Broccoli, Cauliflower, and Potato Meal-for-One:


1 medium Potato
1 cup pressure cooked broccoli
1/2 cup pressure cooked cauliflower
Salt and Pepper to taste


1). Prepare the vegetables as you would typically enjoy. As previously noted, I like to bake my potato and will sometimes eat the broccoli and cauliflower raw or after processing in a pressure cooker.

2). Add salt, pepper or other condiments to taste. You may consider ketchup, hot sauce, or other flavorings to bring this to life for your taste buds!

This is easy, tastes great, and is both filling and nutritious. A great well rounded plant-based dinner plate!
