- 4 slices sourdough panini bread (oil free)
- 6 basil leaves
- 1 medium yellow onion, sliced thin
- 1 avocado
- 1 cup fresh spinach leaves
- 1 tomato
- ½ cup sweet peppers
- Dijon mustard (as much as desired)
- Ground salt and pepper
1 Saute the sliced onions in 1/4 cup vegetable broth or water for 8-10 minutes until brown and caramelized.
2 Mash up avocado and slice tomato.
4 Cook sandwich in panini maker, grill, or on non-stick pan until golden brown!
