Powerhouse Panini



1 Saute the sliced onions in 1/4 cup vegetable broth or water for 8-10 minutes until brown and caramelized.

2 Mash up avocado and slice tomato.

3 Starting with the bottom layer of bread put on mashed avocado, sprinkling of salt and pepper, tomato, onions, sweet peppers, basil leaves, spinach, and finish with mustard spread on the top layer.

4 Cook sandwich in panini maker, grill, or on non-stick pan until golden brown!
