- 4 slices Ezekiel bread or other oil-free whole wheat bread
- 1 lb carrots (will have some leftover)
- 1 qt sauerkraut (will have some leftover)
- ½ cup BBQ sauce
- 1 tbsp nutritional yeast
- 1 medium sized yellow onion, chopped
1 Wash carrots and chop off ends. Place carrots in bottom of instant pot. Cover carrots with sauerkraut.
2 Cook carrots and sauerkraut in 5 minutes of pressure and 5 minutes on natural release.
3 Remove carrots and sauerkraut, and slice carrots in half down middle.
4 Stir together BBQ and nutritional yeast, and spread on each slice of bread.
5 Place chopped onion on each slice of bread.
6 Layer on 5 slices of carrots on one slice of bread per sandwich and top with desired amount of sauerkraut. Carefully place top slice of bread containing BBQ sauce and onion onto bottom portion of sandwich.
7 Place sandwich on hot Panini grill, making sure the lid is tightly closed. Cook for 5 minutes.
