Cranberry Nut Cookies

I absolutely love the combination of cranberries, walnuts, and orange. If you love this combination as well you will love these Cranberry-Nut cookies. They have a hint of orange that is refreshing and delicious. These cookies are dairy, fat, and guilt free. They are perfect for the up-coming holidays...or can even be used as a quick breakfast!

Ingredients:

• 1 ½ cup wheat or white flour
• 1 ½ cup oatmeal
• 1 ½ tsp baking powder
• ½ cup packed brown sugar
• 1 tsp cinnamon
• ⅛ tsp nutmeg
• ½ tsp sea salt
• 1 tbsp orange zest
• 2 tbsp orange juice
• 2 tsp vanilla extract
• ½ cup applesauce
• ½ cup almond milk
• 1 tbsp maple syrup
• ½ cup chopped walnuts
• ¾ cup dried cranberries

Directions:

  1. Combine in medium bowl the flour, oatmeal, baking powder, brown sugar, cinnamon, nutmeg, and sea salt. Stir until well combined.
     
  2. In a separate large bowl combine orange zest, orange juice, vanilla extract, applesauce, almond milk, and maple syrup. Stir until well combined.
     
  3. Slowly pour dry ingredients into wet ingredients. Stir well as you go. It will be a thick batter. Once well combined add in walnuts and cranberries and stir again.
     
  4. Place spoonfuls of cookie batter onto cookie sheet and place into a 350 degree oven. Bake for 15 minutes. 

    Makes about 2 dozen cookies.
