Are you looking to cook a simple, plant-based dinner tonight? The simple linguini, tomato basil sauce, and sautéed onions recipe should do the trick.
While you can certainly create your own pastas and sauces, it is often easier to just use store bought products. In an effort to make a simple, less time consuming dinner recipe, I opted to use store brand linguini and Francesco Rinaldi's Hearty Tomato & Basil Sauce. This is a great sauce because it is vegan friendly and features minimal ingredients - which is primarily made up of the expected vegetables and natural spices. With this great base, I was able to prepare some sautéed onions while the pasta was cooking!
- Prepare the pasta and sauce per included instructions.
- Add 1 chopped onion to a skillet with approximately 2 tbsp of olive oil (or alternative vegetable oil) on medium heat. With a spatula, continue to stir until onions have turned a dark brown color. Turn off heat and set aside.
- When the sauce is finished, add the sautéed onions in on low heat. Stir.
- When pasta is done cooking, drain, and combine sauce, sautéed onions, and linguini together.
The taste of this easy pasta dish is really great - very mild. It is possible to create pasta dishes without oil, however in general this will require you to make homemade pasta sauce from scratch (which I love to do as well!). Store bought tomato sauce can be very convenient, and easier for those just starting to explore the world of vegan cooking. A full 16oz box of linguini pasta can feed a family of 2-4 people (depending on your appetite).
