5 Great Vegan Pressure Cooker Cookbooks

Preparing pressure cooker meals is becoming huge within the plant-based community. A good quality pressure cooker, like the reliable Instant Pot, provides easy access to meal variety and, for once, simple meal preparation. Often, one of the biggest struggles for people adopting a whole food, plant-based diet is not only learning how to cook, but increasingly the frequency of meals cooked. For people who are retired, this may not to a problem, but for those of us working full-time jobs and handling other responsibilities (like raising children), making time to cook if it is not a hobby or passion can be tough. 

To help you jump start your pressure cooking, I thought I would put together a small list of vegan-friendly pressure cooker recipe books. I have not used all of these, but have read a number of reviews and can see the great response to many of them online like in conversation with some members of the McDougall Friend's Facebook group. The main intention of this piece was to showcase a diverse mix of celebrity figures that adopted a vegan diet, and who were doing something good with their position of fame. However, It has been brought to my attention through social media and Reddit that a few of the people on the list are no longer vegan. It is quite a shame to hear this given the amount of time and energy spent creating this piece of written content. I thought it would be a useful thing, then, to look into some of the specific celebrities noted as not being vegan celebrities anymore and examine why this confusion is apparently pervasive around the internet. I hope we can have an honest discourse on these former vegan celebrities!

Former President of the United States Bill Clinton is a critical starting point when it comes to examining these ex-vegan celebs. Afterall, his position of power is difficult to come by, and to have had him speak positively regarding a vegan diet for many years may have been quite impactful on many lives. Unfortunately, there appears to be much dishonesty in many vegan media outlets regarding Bill Clinton's status as a vegan. Whether this is intentional or unintentional, it is difficult to judge, as I myself know how difficult finding the real facts online can be.

Celebrities have a lot of fame and power, which can be used to better the world or make it worse. I have come to find that there are quite a few celebrities that have a vegan diet, and a lifestyle that supports sustainability, animal rights, better ethical treatment of workers, and so on. Some celebrities are passively vegan – that is, they are not celebrities because of their vegan views, but became a celebrity as a result of something else like their music or roles in the film industry. Others are active vegan celebrities whose claim to fame is adding something of value to the conversation of a plant-based diet and lifestyle.

Vegan Olympians are a rare breed. They have managed to achieve significant feats of agility and strength within their intense workout regimens, dietary restrictions and requirements, and performance during the heat of Olympic competition. Overcoming the intense stress on both the body and mind starts in the kitchen, as the food we eat functions to not only make us feel full and satisfied, but nourished and ready to go along with the rest of our day.

For your average person, a whole foods, plant-based diet can provide essential nutrients to get through the daily grind of work and leisure. Vegan Olympians living a plant-based lifestyle serve as a huge inspiration for many just entering into this way of living. Often, one of the largest hurdles we face when converting from a Standard American Diet to a whole foods, plant-based diet is that motivation can be difficult to come by in the early stages, especially when you are "going it alone." Vegan Under Pressure by Jill Nussinow - Book Review

There are many vegan cookbooks on the market, but Vegan Under Pressure by Jill Nussinow (AKA: The Veggie Queen) stands out in my mind with its niche focus on making plant-based recipes in a pressure cooker. Immediately, the book title is gripping as this was not the expected implication; but rather the social aspects of veganism can sometimes make one feel, quite literally, “under pressure.” I was lucky enough to receive a copy of this book to provide to the Plant-Smart Living audience (if you join in on our Plant-Smart Living Giveaway running until the end of June, 2016!). I quite enjoyed many of these recipes, which I make in my Instant Pot cooker.

V is for Vegan by Kerstin Rodgers - Book Review

V is For Vegan by Kerstin Rodgers (not to be confused with V is for Vegan: The ABCs of Being Kind) provides 150 vegan recipes with the intention of making veganism attractive to newcomers to a plant-based diet and healthier lifestyle. From the first glance at the included, high quality photographs (by photographer Jan Baldwin), one can tell that much of this food is meant to be the “comfort food” of the vegan world. The vegan recipes included in this cookbook is a great starting point for new vegans and non-vegans alike. It provides some easy starting points to expand your palette wherever you may be on your personal journey.
